Spinach Dip
1 pkg. frozen chopped spinach, cooked and drained
½ cup water
½ tsp. salt
1 cup sour cream
1 cup mayonnaise
¼ tsp. thyme
1 Tbsp. onion, chopped
1 pkg. Knorr’s Vegetable Soup Mix
Cook frozen spinach in water with salt; drain thoroughly in colander. Add sour cream, mayonnaise, thyme, onion and soup mix. Mix thoroughly. Chill and serve with crackers. May add ½ small can water chestnuts, sliced very thin.

Creamy Dill Dip
1 cup sour cream
1 cup mayo
1 Tbsp. minced dried onion
1 Tbsp. dried dill weed
½ tsp. seasoned salt
Combine all ingredients and cover and refrigerate. Serve with assorted veggies, crackers, chips or as a topper for potato skins.

Crab Dip
1 lb. Crab meat
1 (8 oz.) cream cheese, softened
¼ cup chopped parsley
2 (¼ oz.) pkg. slivered toasted almonds
2 Tbsp. chopped onions
2 Tbsp. milk
½ Tbsp. horseradish
½ tsp. salt
Lemon juice to taste
Pepper to taste
Pre-heat oven to 375°. Combine all ingredients together and mix well. Place in a 1-quart baking dish; bake 20 minutes.

Chewy Chex Mix
3 Cups Corn Chex Cereal
3 Cups Rice Chex Cereal
5 Cups Golden Grahams Cereal
1 Cup Coconut
1 Cup Almonds - chopped coarsely
1 Cup Cashew pieces - chopped coarsely
Mix together in a large bowl and set aside.
In a medium heavy saucepan mix-
1 Cup Butter
1 Cup Sugar
1 Cup Light Karo Syrup
Heat until boiling stirring constantly. Boil for one minute - keep stirring. Remove from heat and stir for 1 more minute. Pour over Chex Mix and stir well to coat. Cool slightly and enjoy! (This is even good warm!)

Sausage-Bread Casserole
1½ lb. sausage
6 slices white bread
2 c. grated sharp cheese
1 small can chopped green chilies
4 well-beaten eggs
2 c. milk
1 tsp. dry mustard
Salt & pepper to taste
Crumble and fry the sausage; drain well, set aside. Cut off crust of bread and cube. Mix sausage, bread, cheese and chilies and spread over oiled baking dish. Mix remaining ingredients and pour over sausage-bread mixture. Bake immediately at 350° for 45 minutes covered and 15 minutes uncovered or may be mixed and set in refrigerator overnight before baking as directed.

Onion Steak
½ c. flour
1 tsp. salt
1/8 tsp. pepper
1½ lb. round steak
1 small onion, sliced
1 c. water
1 Tbsp. vinegar
1 bay leaf
½ tsp. thyme
2 Tbsp. oil
Combine flour, salt and pepper. Blend into meat; cut into serving pieces. Brown in oil. Top with onions. Stir in remaining ingredients. Bring to a boil. Reduce heat, cover and simmer until tender. Good with mashed potatoes. Servings: 4-6.

Banana Split Dessert
1 box vanilla wafers, crushed
2 c. sugar
1 c. butter or margarine
4 eggs
In greased 9” x 13” pan, layer cookie crumbs. Microwave sugar, butter and eggs in 2-minute increments, stirring well, for a total of 12 to 13 minutes or until thick and creamy; cool. Pour on crumbs. Spread evenly as possible. Top with bananas, strawberries, kiwi and peaches, then spread Cool Whip on top and sprinkle with chopped pecans

Strawberry & Cream Cheese Muffins
1 egg
1 c. milk
3 Tbsp. vegetable oil
2 c. sifted flour
2 tsp. sugar
3 tsp. baking powder
1 carton frozen strawberries
8 oz. pkg. cream cheese
Combine all dry ingredients. Combine wet ingredients, then mix with the dry ingredients. Mix until lumpy. Combine strawberries and cream cheese and set aside. Grease muffin pan. Fill 1/3 full of batter. Add 2½ teaspoons of strawberry and cream cheese mixture; fill muffin pan 2/3 full and bake at 400° for 20 to 25 minutes. Makes 12 to 15 muffins.

Banana Nut Muffins
2 c. flour
¼ c. sugar
1 Tbsp. baking powder
½ tsp. salt
1 c. milk
1 egg, beaten
1/3 c. vegetable oil
¾ c. mashed bananas
½ c. chopped nuts
Sift together four, sugar, baking powder and salt. Mix milk, egg, oil, bananas and nuts. Pour liquid ingredients over dry ingredients. Mix batter just enough to moisten. Spoon batter into greased muffin tins. Cook at 400° for 15 minutes or until toothpick comes out clean.

Banana Nut Bread 2
¼ c. butter or margarine
1 c. sugar
2 eggs
½ tsp. salt
1 tsp. vanilla
2 c. flour
¼ tsp. soda
½ tsp. baking powder
1/3 c. milk
3 bananas, mashed
½ c. chopped nuts
Cream butter and sugar. Beat in eggs, salt and vanilla. Add soda, baking powder and flour sifted together. Add bananas, milk and nuts. Pour into greased and floured loaf pan. Bake at 350° for 1 hour.
