1 cup shortening (can use part butter)
¾ cup sugar
2 eggs
1 cup mashed cooked carrots
2 cups flour
1 small can crushed pineapple, drained
2 tsp. baking powder
½ tsp. salt
¾ cup shredded coconut

Bake at 400° for 8 minutes, then frost.

Frosting:
1½ cups powdered sugar
3 Tbsp. butter
2 tsp. grated orange peel
1 Tbsp. orange juice (approx.)
